“In January of 1999, I took over an old Victorian building that was once a French Laundry on Pine Street, and turned it into a bakery. When it came time to put something on the board outside, I just had them paint “Boulangerie.” I was only planning to bake bread and sell wholesale there. The front was to be the packing area but we thought we would put some bread in the window to sell to customers walking by. Within a few days you couldn’t find parking anywhere nearby.
Word spreads quickly in San Francisco and people began lining up outside all morning. So we started to make some wonderful little croissants, just for fun...we sold out in 20 minutes. The next day we made more and added chocolate and almond ones also. The following day we baked miniature palmier cookies, put them into cute little bags and before we knew it we were selling 200 bags a day.
Then the San Francisco Examiner gave us a great review saying that eating our products was like a first kiss to a new love and that was it...no turning back.
Since then, our incredible team of bakers and pastry chefs bake 80 different beautiful and delicious products every day. Come and see us, we are proud of what we have achieved!”
